Date Night Dinner Idea
Topher and I love date nights and we also love pizza. I am in week 5 of the Tone It Up Bikini Series, Round 2, and when I saw pizza on the menu for dinner, I got really excited. But, for some reason also nervous because it’s pizza. I thought, will this throw me off my game?
It’s on the plan, and I like sticking to a plan, so we headed to the grocery store to pick up what we needed, and then headed back home to get cookin’. Here are the ingredients and cooking instructions:
Portobello Mushroom Pizza
2-4 large Portobello mushrooms
Cheese (according to the Tone It Up Diet Plan for the Bikini Series, it is recommended to use Vegan cheese, so we bought Daiya Cheddar Cheese, but we bought shredded mozzarella just in case. Good thing we did, because we tried the Daiya and it just was not the same. So, we used the shredded mozzarella instead. I’m from Wisconsin, it’s hard to give up regular cheese. #justsayin)
Tomato Sauce (we used tomato basil sauce)
*We added in Pepperoni. We love pepperoni pizza, so it was a must. 🙂
Heat the oven to 400 degrees.
Scoop out the inside of the mushroom (the gills). Fill the mushroom with tomato sauce. Then lay the pepperoni, arugula, and cheese. Put the mushrooms in the oven then for 10min. That’s it! So simple and delicious. I was big time impressed with how tasty it was, and how it definitely filled the want for pizza. #satisfaction

After we devoured our pizza, dessert was on the menu.
Strawberry Bikini Ice Cream
1/2 cup unsweetened vanilla almond milk
1 cup frozen strawberries
Blend. Top with shredded unsweetened coconut flakes and strawberries <3 Enjoy!
